1 T sesame oil
1 medium to large onion finely chopped
1 red sweet pepper finely chopped
2 c broccoli
5 T non-hydrogenated chunky peanut butter
4 oz of pasta shells or bow ties or spirals
2 medium cloves of garlic
2 c water
cayenne pepper to taste
salt to taste

Fill medium saucepan with cold water and bring to boil
While waiting for saucepan to boil place 10 inch cast iron frying pan on high heat
Add sesame oil to frying pan
Add finely chopped onion and red pepper into frying pan
Saute vegetable until they soften, then reduce to medium heat
Water in saucepan should be boiling about now
Place broccoli in boiling water,
After broccoli water reboils add the pasta (cook per time on pasta package) about 10 min
While the pasta is cooking add peanut sauce into frying pan
Slowly stir in about 1 cup of water into peanut butter area of frying pan
Sauce with thicken over a few minutes,keep stirring...do not stop stirring (reduce heat) Once sauce begins to thicken, slowly add second cup of water stirring continuously
Sauce should be like a heavy gravy when fully cooked, you might need to add a bit of additional water to maintain this consistency.
When pasta is ready, drain water and place cooked pasta and broccoli into frying pan
stirring into the peanut sauce.
Add salt and cayenne pepper to taste just before serving
Serve directly from frying pan

A friend who was a missionary in Africa, taught me how to make this dish.
However she only used spinach as a vegetable and it was served over rice.
My variation of the recipe is fast and easy to prepare.
Hot peppers can be added directly to the peppers and onions for those that like HOT food
Cold beer goes along well as a beverage.
