8 medium chicken breasts
salt
16 Tbs. green onions chopped
16 Tbs. parsley
1 lb. butter
flour
1 egg beaten
bread crumbs

Directions:
Directions:
Purchase boned chicken breast or cut four medium breasts lengthwise in half. Remove the skin and cut away from bones. Do not tear meat: each half should be in one piece.
Place each piece bone side up between two pieces of saran wrap.
Pound from center out with a wooden mallet to form cutlets 1/4 in. thick.
Sprinkle with salt.
Measure 1 Tbs. each of chopped greens and parsley. Sprinkle over cutlet.
Cut 1 stick of chilled butter into 8 pieces.
Place elongated piece of butter near the edge of each cutlet.
Roll in jellyroll fashion, tucking in the sides of the meat as you proceed. Seal well.
Dust with flour.
Dip into beaten egg. Roll in fine dry bread crumbs.
Use a toothpick to secure roll if necessary.
Chill the rolls of chicken at least 1 hour if time permits.
Fry in deep, hot fat set at 350 degrees for about 10 min. or until golden brown.

This was a recipe from my cooking class project at BG. We had to prepare a full meal on a budget for our family. We also had to present the dinner with a tablecloth, centerpiece, adn properly set table. The dinner also include Baked Alaska and Wilted lettuce salad.
