4 tbsp butter
1/2 cup onion
16 oz bag frozen mixed vegetables
3 cups chicken broth
4 1/2 tbsp flour
1/8 tsp thyme
2 cups cooked turkey
1 tsp salt
1/2 tsp pepper
egg
4 pie crusts

Directions:
Directions:
Saute 2 tbsp butter and onion.
Add 2 more tbsp butter, and veggies. Stir in flour and cook for a couple of minutes.
Add chicken broth and seasonings. Simmer and let thicken. Add turkey.
Put crusts in pie pans, put in filling and top with additional pie crust.
Poke vent holes on top and brush with egg.
Bake at 350 degrees for 40 minutes.

This recipe makes 2 pot pies. Good to make with leftover Thanksgiving turkey. Gobble, gobble!
