1 large butternut squash, peeled, seeded and cut into 1" pieces (about 10 cups)
1 large apple, peeled, cut into 1" pieces (about 1 3/4 cups)
1 large onion, cut into 1" pieces (about 2 cups)
2 tsp curry powder
1/2 tsp salt
1/8 tsp white pepper
3.5 cups chicken broth
1/2 cup canned coconut milk (not cream of coconut)
3 TBSP packed brown sugar
1 small unpeeled red apple, chopped (if desired, to be used for garnish)

Directions:
Directions:
Spray crockpot bowl with cooking oil.
Toss squash, apple, onion, curry powder, salt and white pepper.
Pour broth over the top.
Cover and cook on low for 8-10 hours.
Pour about 3 cups of the soup mixture in the blender, add coconut milk and brown sugar.
Blend until smooth and return to the slow cooker.

Increase heat setting to high, cover and cook 10-15 minutes longer or until hot.
Serve with chopped apples, if wanted.
