2 Cups Tomatoes peeled & diced
2 Garlic Cloves, minced
1 tsp. Salt
1/4 tsp. Cayenne Pepper
1/4 tsp. Cumin or 1 Tbsp. Paprika
1 Tbsp. Vinegar
3 Tbsp. Olive Oil
1/4 Cup Bread Crumbs, finely chopped
1 English Cucumber, peeled & diced
3 Green Onions, sliced
1/2 Green Pepper, diced

Directions:
Scald whole tomatoes quickly in hot water, peel, seed, and cut into pieces. Pulse tomatoes, cucumber, green pepper, green onions in a blender along with garlic, seasonings, olive oil, bread crumbs, and vinegar until smooth. Add water to thin as desired; chill thoroughly.
