2 Tbsp olive oil
1 large garlic clove, crushed
½ tsp. finely chopped lemon peel
1½ cups (4 oz) snow peas
½ medium red pepper, cut in strips
¾ lb. cleaned medium shrimp
1 can (10 oz) chicken broth
1½ cups minute rice
1 Tbsp lemon juice
¼ tsp. salt
dash pepper
1 Tbsp chopped fresh basil or 2 tsp. dried basil
2 Tbsp chopped Italian parsley

Stove Top: Heat oil in large frying pan; stir-fry garlic and lemon peel for 30 seconds. Add vegetables and shrimp. Stir-fry over medium heat until shrimp turns pink, about 3 minutes. Meanwhile, add water to chicken broth to make 1½ cups. Add broth and bring to a boil. Stir in rice and seasonings. Cover and let stand 5 minutes before serving. Serves 4.

Microwave: Combine garlic, lemon peel, vegetables, shrimp, spices and oil in dish. Cover and cook on high for 5 minutes, stirring at half time. Add remaining ingredients and cook 5 minutes more. Let stand 3 minutes before serving.
