12 oz artichoke hearts marinated in oil
¼ cup olive oil
2 cups chopped onions
2 Tbsp minced garlic
½ tsp oregano
½ tsp basil
1 Tbsp coarse black pepper
½ tsp salt
pinch red pepper flakes (optional)
1 28oz can diced plum tomatoes and juice
¼ cup Parmesan cheese
¼ cup fresh flat leaf parsley

Directions:

Drain artichokes, reserve marinade.
Heat oil in a large saucepan. Add onions, garlic, oregano, basil, pepper, salt, red pepper flakes, and reserved marinade. Saute over med-low heat until garlic and onions are soft and translucent, about 10 minutes.
Add tomatoes and simmer 30 minutes.
Add artichoke hearts, Parmesan and parsley. Stir gently and simmer 5 minutes.

Makes 6 portions, which is enough for 1 pound of pasta.
Serve over tortellini or rotini.
