12 oz Thai rice stick noodles
3 eggs
¼ cup vegetable oil or olive oil
2 Tbsp smashed garlic
1 big yellow finely chopped onion
½ cup ground eanuts
½ cup fish sauce
¼ cup sugar
¼ cup rice vinegar
2 Tbsp Thai pepper powder or chili hot sauté
2 cups fresh bean sprouts
¼ cup shelled peanuts
2 Tbsp chopped fresh cilantro leaves

Directions:

Soak the rice stick noodles in warm water for about 30 minutes. Remove them and place in a strainer to let some water drain off (keep moist) and set aside.

Heat the oil over medium-high heat in a wok or large skillet and add garlic, onion, and cook for 2 minutes then add the eggs one at a time. Top with the noodles. One at a time, add the fish sauce, soy sauce, sugar and pepper powder (or chili hot sauté), stirring the mixture the entire time. If too sticky, add some water. Cook about 5 minutes or until the noodles are getting soft. (Note: chicken, shrimp or tofu can be added to this dish at the sauté stage.) Check to see if the taste of the dish is suitable to you. If not, then add in either fish sauce or sugar. Add bean sprouts and cook for 2 minutes. To serve, place the noodle mixture with ground peanuts on a plate, and garnish with shelled peanuts and cilantro.
