5 lbs red potatoes
½ lb. butter
1½ c. milk
6 pieces of bacon – cooked and chopped
1 c. cheddar cheese
½ c. sour cream
¾ c. green onions
¼ c. olive oil
Salt and pepper to taste

Directions:
Directions:
Cut potatoes in half. Boil half of the potato until medium soft and half well done. Take the medium soft potatoes and toss them with olive oil, salt and pepper and put cut side up on a sheet pan. Spoon out a small amount of the middle of the potato.

Take the well done half and whip with the butter, milk and sour cream. Add the bacon and green onions in with a spoon, season. Put mixture into pastry bag or freezer bag with small corner cut out. Pipe mix on the other halves of potatoes and drizzle with olive oil. Bake at 400º until potatoes start to brown, then top with cheese and cook for 2 more minutes.
