4 skinless, boneless chicken breasts, pounded flat
2 eggs - beaten
1½ cup bread crumbs
1/3 cup parmesan cheese
1 Tbsp butter (unsalted)
3 Tbsp olive oil

Directions:
Directions:
Dip breasts in egg, and let it drip off. Coat chicken with the mixture of bread crumbs and cheese. Press coating into chicken with hands. Can be stored covered in refrigerator for several hours. Cook in a hot pan in butter and olive oil until crisp - 3-4 minutes each side.
