1 cup buttermilk
1 cup cornmeal
1 cup flour
3 tablespoons sugar
1 teaspoon salt
1 teaspoon baking powder
1 cup grated cheddar cheese
2 eggs
4 tablespoons butter
1 small onion chopped
1 can whole kernel corn (drained)
4 ounce can chopped green and red chiles

Directions:

1. Preheat oven to 350º
2. Spray an 8x8 inch pan with cooking spray
3. Combine cornmeal and buttermilk and let stand 5 minutes
4. In a separate bowl, combine dry ingredients.
5. Add in the cheese, eggs, butter, onion, corn and chiles
6. Stir buttermilk mixture into batter
7. Pour into greased pan and bake for 20-25 minutes
