1 lb ground beef
1/2 large yellow onion, diced
1 tsp cumin
1 tsp diced garlic from jar (or 1 fresh clove, minced)
sprinkle of cayenne
1 large bay leaf
1/2 tsp ea salt & pepper (more salt when done if needed)
1/2 cup raisins
1 small jar olives (with pimentos), sliced
1 can diced tomatoes
White rice, about 1 cup per person prepared

Directions:

• In a frying pan, brown the ground beef and drain off the grease. Put the cooked meat in a bowl and set aside.
• In the same frying pan, add a little olive oil and heat, add the onions and sauté until translucent.
• Once onions are done, add all other ingredients (except rice), mix well, and let cook about 5 min.
• Add the meat to the pan, mix well and let simmer about 15 minutes so flavors can meld (longer is better if you have the time so it will be more flavorful)
• Serve about a cup full or so of the meat mixture over about a cup full of rice.

This is a quick and yummy one dish meal everyone will love. It's a contradiction of flavors between the sweetness of the raisins, saltiness of the olives and the Spanish flavors that work great together.
