1 1/2 cups flour
pinch salt
1 tbsp. sugar
1 tbsp. butter
1 egg, beaten
1/4 cup white wine
Filling:
2 cups ricotta cheese
1 cup heavy cream, whipped
candied cherries, cut in small pieces
candied pineapple, cut in small pieces
grated chocolate bar or very small choc. chips
sliced almonds
3 tbsp. confectionary sugar
vanilla

Directions:

Mix flour, 1 tbsp. sugar, salt. Cut in butter with pastry cutter or fork, then add beaten egg and wine. Stir together, then knead on pastry board until soft and smooth. Refrigerate 20-30 minutes. Dough needs to be rolled very thin and works best using a pasta machine set on #4. Cut into 4-inch strips and wrap loosely around wooden dowels or cannoli forms (metal tubes which I have). Press edges together (keep dough fairly loose around dowel). Drop in hot fat (Crisco) until light golden in color and looks slightly bubbly. Yields: 3 dozen.
Fill with ricotta mixture which has been chilled for half an hour. Do not fill until almost ready to serve as shell absorbs liquid and gets too soft. Dust with confectionery sugar before serving.. Don't fill until shortly before eating otherwise shell gets soggy.

Yes, actually made these (several times) and they're really good. Pretty easy if using the pasta machine to roll out dough.
