1 cup Bell peppers
1 (15 oz) can Black beans
1 tsp Coriander
3 Garlic cloves
1 cup Red onion
3 cups Sweet potato diced
1 (28 oz) can Tomatoes, fire roasted
2 tbsp Tomato paste
3 cups Vegetable broth
1/2 cup Quinoa
1/2 tsp Cayenne
1 tbsp Chili powder
2 tsp Paprika
1 Salt & pepper
2 tsp Cumin

Directions:
Directions:
Add all ingredients into a crock pot (starting with just 3 cups of broth). Turn on high and cook for 4 hours, turn down to low and continue to cook until ready to serve. If too thick, stir in another ½ - 1 cup of water.

Serve with diced avocado (or guacamole) and tortilla chips. It's such a good combo!
