PEROGIES Recipe

6 cups flour
1 Tbsp salt
2 cups of water
2 eggs
6 Tbsp oil

Directions:
Directions:
Mix egg, oil and water add dry ingredient Stir to combine or mix with your hands. Once you have mixed , tip onto counter and knead 50 times. Let sit for 1/2-1 hr to make a soft dough roll out 1/3 of dough at a time to about 1/8 thickness on floured board. Cut out 3 1/2 inch rounds. Gather up scraps and reroll and cut out. Place 1 Tbsp of filling on each round, fold over and seal edges well. by pinching .
Cook in boiling water until perogies are done and float to top 5-8 minutes
Filling: 1 cup creamed cottage cheese , 1 cup mashed potatoes, 2 chopped green onion, 1 tsp salt 1/4 c butter. or just cottage cheese,onion and egg
Serve with melted butter and sauteed onions, and sour cream

You can also put fruit like plums or blueberries as a filling
