1 stewing hen Bouquet Garni: celery stalk, thyme, bay leaf, parsley
1 t. salt 1 large onion
½ c. barley 2 celery stalks, chopped
1 c. canned tomatoes 2 garlic cloves, minced
1 t. basil l c. macaroni
salt & pepper 4 c. spinach, torn
2 T. oil ¼ c. parsley
4 carrots, sliced
2 zucchini, sliced Parmesan cheese

Directions:

Place hen in large pan and cover with 4-5 quarts of cold water. Bring to a boil and skim off foam. Add bouquet garni; reduce heat and simmer 2½ hours. Remove chicken to cool. Discard bouquet garni. Strain & refrigerate. Remove fat and cut the chicken into pieces.

Bring to a boil and add barley, tomatoes, basil, salt and pepper. Cover and simmer 10 minutes. Meanwhile, heat oil, cook carrots, zucchini, onion, celery and garlic until softened. Add to stock and simmer 15 minutes. Add macaroni, cut-up chicken, spinach and parsley. Sprinkle with Parmesan.
