1/2 lb. (2 sticks) Unsalted Butter (room temperature)
3/4 c. Light Brown Sugar (lightly packed)
3/4 c. Granulated Sugar
2 tsp. Pure Vanilla Extract
2 extra-large Eggs (room temperature)
1 3/4 c. All-purpose Flour
1 tsp. Baking Soda
1 tsp. Kosher Salt
1 1/4 c. Old-fashioned Oats
3/4 lb. Bittersweet Chocolate (chopped in chunks)
3/4 c. Dried Cranberries or Dried Cherries
Flaking Salt
Optional: 1 c. chopped nuts (walnuts, pecans, pistachios)

Preheat Oven to 375º
Line 3 baking sheets with parchment paper
Use an electric mixer with a paddle and beat the butter, brown sugar, and granulated sugar on medium high for 3 minutes, until light and fluffy
Scape the bowl with a rubber spatula
On low speed, add the vanilla, then the eggs, one at a time; scrape bowl
Sift the flour, baking soda, and salt in a medium bowl; mix in the oats
With mixer on low, slowly add the flour mixture to the butter/sugar mixture; don't overbeat
Use a rubber spatula to stir in the chocolate and cranberries or cherries until mixed; add optional nuts and stir
With a 1 3/4" ice cream scoop (or 2 spoons), scoop onto sheet pans
Sprinkle with salt
Bake for 10 - 12 minutes until golden brown
