1 C carrots, diced small
1 C celery, diced small
1 C onion, diced small
4 tsp minced garlic
2 Tbsp flour
4 Tbsp butter
2/3 C Dortmunder Gold
2 C heavy cream
5 C chicken stock
3 1/2 C Stilton cheese, crumbled
4 C Cheddar cheese, shredded
2 bay laves
1/2 tsp pepper
1/2 tsp Tabasco sauce
4 Tbsp cornstarch
4 Tbsp water

Directions:
Directions:
Process carrots, onion, garlic and celery in food processor until smooth.
Combine flour, butter and purreed ingredients in large saucepan. Simmer 15 minutes.
Add beer, cream, and chicken stock. Simmer 15 minutes.
Add cheeses, bay leaves, Tabasco, and pepper.
Simmer 30 minutes.
In small cup, mix cornstarch and water.
Add to soup at last minutes to thicken.
Remove bay leaves.
