1 head of garlic
1 head of cauliflower (about 2 1/2 lbs)
1/2 cup fat free sour cream
2 T butter
1 or 2 t minced canned chipotle peppers in adobo sauce
1 t salt
1/4 t pepper

Directions:
Directions:
Cut off pointed end of garlic; place garlic on foil and seal. Bake at 425º for 30 minutes. Remove from oven and let stand 10 minutes. Squeeze pulp from garlic into the bowl of a food processor.
Cut cauliflower into florets, arrange in a steamer basket over boiling water. Cover and steam 20 minutes or until tender.
Add cauliflower, sour cream and remaining ingredients to garlic in foo processor. Process until smooth, stopping to scrape down sides.
