2 T butter
1 large onion, chopped
1 pound russet potatoes, peeled, thinly sliced
1 12 ounce yam, peeled, thinly sliced
1 8 ounce turnip, peeled, thinly sliced
1 cup chicken stock
1 cup dry vermouth

Directions:
Directions:
Preheat oven to 375º
Melt butter in heavy large saucepan over medium eat. Add onion and saute until tender, about 8 minutes. Add potatoes, yam, turnip, stock and vermouth. Season generously with salt and pepper, Bring t boil. Over, reduce heat to low and simmer for 15 minutes.
Butter 8X8 baking dish with 2: high sides. Transfer vegetables and liquid to dish. Bake until vegetables are tender and most liquid is absorbed, about 1 hour. Let stand 10 minutes before serving.
