9" to 10" unbaked pie crust, preferably whole wheat
1 tsp. butter
1 ½ c. (packed) cheese (your choice of type)
2 c. of fresh veggies (examples: onions & mushrooms, or onions and spinach, onions & broccoli or fresh tomatoes, etc.)
½ tsp. salt
Black pepper
A pinch of thyme
½ tsp. dry mustard
3-4 large eggs
1½ c. milk
2 Tbs. flour
Paprika

This quiche can be made in a variety of ways. The basic idea is to have a pie shell first, then a layer of cheese of your choice (which melts and seals crust from veggie layer), then a veggie layer, then egg & milk layer poured on last, topped with a sprinkle of paprika. Serve hot, warm or at room Temperature.

Preheat oven to 375º. Melt butter in a small pan. Add onion and sauté over medium heat for 3 minutes. When they begin to soften, add veggies, salt, pepper, thyme, and mustard. Sauté 5 minutes more and remove from heat. Combine eggs, milk, and flour in a blender or food processor and beat well. Spread the grated cheese over the bottom of the unbaked crust and spread the veggies mixture on top. Pour in the custard and sprinkle top with paprika. Bake for 35-45 minutes or until solid in the center.
