3 Roma tomatoes, diced
2 large Beefeater tomatoes, diced
˝ red onion, diced
˝ sweet white onion, diced
1 cup fresh cilantro, diced (take leaves off, don’t include any stems)
1 Tbsp diced jalapeno (without seeds, can be from jar)
1 lime squeezed (use fork to squeeze to get pulp out)
˝ bottle of beer (regular, not ale or lager)
1 tsp garlic powder
1 tsp Lawry’s seasoning salt
1 tsp black pepper
Dash of ground oregano
Dash of Cayenne pepper (or more if you like it hotter)
1 Tsp Chili powder
2 Tsp Cumin
More salt to taste

• Toss all ingredients together. Place in fridge to chill about 30 min before serving with chips.

A favorite of Wendi's family. Her father, Charles Davis Wilson taught her how to make this awesome dish and she tweaked it over the years so as not to be as hot as her dad's. He is a true Texan that had jalapeno eating contests with Wendi's brother, Timothy, so they love the heat. Wendi, not so much.
