4c. Flour
2Tbsp. Sugar
1 tsp. Salt
1 tsp. Baking Soda
4 tbsp.Butter
1 Egg (lightly beaten)
2 c. Buttermilk (preferably Kate's)
Optional: 1 c. Raisins

Directions:
Directions:
Preheat oven to 425º
Sift together flour, sugar, salt, and baking soda in a large bowl
Using a pastry cutter, work butter into flour mixture until it resembles coarse meal; stir in raisins
Make a well in the flour mixture; add egg and buttermilk and mix with a wooden spoon until stiff
Dust hands with flour and knead until dough forms a rough ball; shape into a round loaf
Transfer dough to a cast iron skillet or Dutch oven (if using Dutch oven, bake with lid on for half the time, lid off for the rest).
Score top of loaf with an X about a half inch deep
Bake about 40 minutes - until golden brown and the bottom sounds hollow when tapped
Cool briefly
