1 Eggplant (peeled and cut into fries - approximately 1/2 x 3"
1 Egg
2 c. Flour
Salt, Pepper, Garlic Powder, Onion Powder
1/4 lb. (or more) Shredded Cheese (Cheddar, Provolone or other)
Marinara sauce

Directions:
Directions:
Beat egg and add spices then add flour to egg mixture
Dip the fries into the batter and fry in hot oil
Drain on a paper towel and while hot, top with shredded cheese of your choice
Serve with a side of marinara sauce
