3 - 4 pound beef pot roast
1 cup butter, plus 2 tablespoons
Salt and pepper, to taste
1 package Ranch dressing and seasoning mix (or 3 tablespoons powder)
1 package Au Jus
5-6 pepperoncini, whole

Directions:
Directions:
1. Pat the pot roast dry and season all over with salt and pepper to taste.
2. Heat 2 tablespoons butter in a skillet over medium-high heat. Brown pot roast on all sides. Remove from heat.
3. Place pot roast in the bottom of the slow-cooker.
4. Sprinkle the top of the pot roast with the Ranch dressing mix and Au Jus.
5. Cut the remaining butter into chunks and place on top of the pot roast.
6. Arrange pepperoncini on top of the roast.
7. Cook on low for 5-7 hours until the pot roast begins to fall apart.
8. Serve with mashed potatoes or your favorite sides.
