1 pkg. Lemon Jello
3/4 c. Sugar
1 1/4 c. Hot Water
1 - 13 oz. can Evaporated Milk (refrigerated for 1 - 2 days)
1 Lemon (juice and rind)
Graham Cracker Crust (graham crackers and butter)
Optional: Whipped Cream

Directions:
Directions:
Preheat Oven to 375º
Make a graham cracker crust and bake for 5 minutes
Combine jello and sugar and pour hot water over the mixture
Refrigerate until it starts to thicken - about 1 1/4 hour
Beat until very fluffy
Beat cold milk until whipped and add the juice and rind of the lemon
Add the jello mixture and whip until smooth
Pour into a graham cracker crust and refrigerate
Optional: top with whipped cream
