1 lb almond paste
2 cups superfine sugar
4 large egg whites
1 cup flour
Almonds to garnish

Preheat oven to 375°F. and line baking sheets with parchment or Silipats. Using a food processor, mix the almond past with the sugar, and pulse until very fine. Add the egg whites in three additions, processing well after each addition.Slowly add enough flour to form a smooth dough. Place the dough in a pastry tube fitted with a plain 1/4” round tip. Pipe the dough in roughly 1-1/2” rounds, then lightly pat down with a dampened finger. Garnish with a whole almond, or dust with sanding sugar. Bake for 15 minutes, just until golden. Cool on rack, then gently peel from the parchment. These make a crisp almond cookie and keep well.
