Ingredients:  
1/2 lb unsalted Butter-melted
3 Onions- diced
2 Carrots- diced
2 Celery ribs-diced
2 cloves Garlic- minced
1 lb Mushrooms chopped ( button, portabella etc.)
1 1/2 Tbsp Dill-chopped
16 oz Vegetable Stock--(Chicken or Beef)
1 C Barley. pearl or quick-cook
Salt & Pepper to taste

Directions:
Directions:
Heat butter in soup pot.
Add onions, carrots,and celery
Saute until clear
Add garlic ,salt and pepper--saute for 1 min
Add mushrooms---saute 3 min
Add dill--saute 1 min
Add barley and broth and bring to a boil
Simmer until barley is tender--about 20-30 min(quick-cook)---1 hr (pearl)
Add seasoning
