Essence Creole Seasoning:
2 1/2 tbsp. paprika
2 tbsp, salt
2 tbsp. garlic powder
1 tbsp. black pepper
1 tbsp. onion powder
1 tbsp. cayenne pepper
1 tbsp. dried oregano
1 tbsp. dried thyme

1 small (2 1/2 lbs.) chicken, cut into 8 pieces
Essence of Creole Seasoning - to taste
1/2 cup all-purpose flour
1/4 cup vegetable oil
1 lb. Italian sausage, cut crosswise
2 cups onion, julienned
4 bay leaves
2 tbsp. chopped garlic
6 cups chicken stock
1/4 cup chopped green onions
salt, to taste

For the Essence Creole Seasoning - combine all ingredients thoroughly. Yield is 2/3 cups.

Season the chicken pieces with the Essence. In a mixing bowl, add the flour and season the flour with more of the Essence. Dredge the chicken in the seasoned flour, coating each side completely.

Add oil to a shallow frying pan over medium heat. When the oil is hot, add the chicken, turning to brown on all sides. Cook until evenly browned about 5 - 6 minutes. Drain on kitchen paper to remove excess oil. Pierce the sausage toavoid sausages exploding in the oil and to release oils and brown - approximately 5 - 6 minutes also removing to kitchen paper to drain. .

In a slow cooker, on high, add the chicken, sausage and onions. Then season with salt and more cayenne if desired. Add the bay leaves, garlic and chicken stock.

Cover the slow cooker and cook for 3 hours on high or until the chicken is tender. Stir in the green onions as a garnish just before serving.

Remaining juices may be thickened with a cornstarch-water slurry to make a 'gravy'.
