¼ c. vegetable oil
1 ¼ lbs. stew beef, cut into 1” pieces
1 large garlic clove, minced
4 c. beef stock or canned beef broth
2 Tbsp. tomato paste
1 Tbsp. sugar
1 Tbsp. dried thyme
1 Tbsp. Worcestershire sauce
1 bay leaf
5 or 6 small red potatoes, halved
1 onion, chopped
1 c. baby carrots (or peeled & quartered regular size carrots)

Heat oil in large heavy pot over medium-high heat. Add beef & brown well on all sides. Add garlic, beef stock, tomato paste, sugar, thyme, Worcestershire sauce & bay leaf. Bring mixture to boil. Reduce heat to low, cover & simmer for 1 ½ hrs.

Add potatoes, onion & carrots to meat mixture. Simmer uncovered until vegetables & beef are very tender (about 40 minutes). Discard bay leaf when ready to serve.
