3 to 5 lb roast (prime rib)
2 Tbsp balsamic vinegar

Mix together:
2 Tbsp olive oil
Crushed dried rosemary
Dried thyme
2 large garlic cloves, crushed
Salt
Pepper


Directions:
Directions:
Pour the balsamic vinegar over the roast. Mix the rest of the ingredients together. Rub into roast thoroughly. Disposable gloves work well for this, but you can use your hands if you don't mind them being garlic-scented afterward.

Bake at 450º for 15 minutes. Reduce heat and bake at 350º for one hour. Vegetables for roasting can be added during the last hour of cooking. Baste meat and vegetables with pan juices.

We made a prime rib roast for my dad’s 90th birthday dinner and prepared it this way. It was delicious. This recipe also works very well with leg of lamb.
