1 lb. hot sausage
6 slices bread, cubed
8-12 oz. grated Cheddar cheese
1/4 c butter, melted
1/2 tsp dry mustard
3 eggs, well beaten
2 c milk
1 tsp salt
dash cayenne pepper

Directions:
Directions:
Cook sausage and drain. Spread in 9x13 in glass dish which has been sprayed with non-stick spray. Top with bread and cheese. Pour melted butter over cheese. Combine eggs and milk. Stir in dry mustard, salt, and cayenne. Add to casserole.
Let stand 3 hours or refrigerate overnight.
Bake, covered, at 350º for 1 hour.

Variation: Use sour dough bread and substitute 1 1/2 lbs. shrimp, crab, or ham for the sausage.

Serves: 8
