2 lbs. shredded hash browns
1 tsp. salt
1/4 tsp. pepper
1/2 cup chopped onion (or to taste)
1 can cream of chicken soup
1 pt. sour cream
2 cups shredded cheddar cheese
1/2 cup melted butter
2 cups crushed Ritz crackers or Corn Flakes

Directions:
Directions:
Mix defrosted potatoes with salt, pepper, onion, soup, and cheese. Put into a greased 9"x13" pan. Mix crackers crumbs or Corn Flakes with melted butter and sprinkle over top of potato mixture. Bake at 350º for 1 hour.
