1 garlic clove, cut in half
1 head of romaine lettuce, leaves soaked in ice water
1/2 cup olive oil
1 lemon, rolled, deseeded, juiced
1 tbsp. Worcestershire sauce
1 tsp. sugar
1/4 tsp. black pepper
1/4 tsp. salt
1 egg, coddled for 1 minute
1 shake red pepper
6 drops Tabasco sauce
croutons
1/3 cup freshly grated Parmesan cheese

Directions:

Rub garlic halves on the inside of salad bowl, then chop garlic into small pieces. Dry romaine lettuce, tear into pieces; add to bowl. In a separate bowl, add chopped garlic, olive oil, lemon juice, Worcestershire sauce, sugar, pepper, salt and coddled egg, red pepper and Tabasco; mix well. Pour 2 tablespoons of dressing in a skillet and brown croutons in it. Toss salad with dressing. Top with croutons and Parmesan cheese.

This is an old favorite which I would make for my niece Ellen when she visited from Chicago. She watched as I prepared the salad and carefully wrote it all down. Now I cherish her handwritten copy of the recipe, which I still refer to when making the dressing.
