2 tablespoons olive oil
1 small red onion, chopped (I used a sweet yellow onion)
3 cloves garlic, chopped
1/4 c sun dried tomatos
1 (16 oz) can Garbanzo Beans, drained
1/2 cup cooked orzo
1 lemon, juiced
2 cups fresh spinach, chopped (or 12 oz frozen chopped spinach thawed and squeezed dry)
salt and pepper to taste
1/2 cup crumbled feta cheese

Directions:
Directions:
Heat oil in a 10 inch skillet over medium heat. Add your onion and garlic and cook until translucent and fragrant.

Add garbanzo beans (chickpeas), sun dried tomatoes, orzo, lemon juice and spinach. Season to taste with salt and pepper. Saute for 4-5 minutes.

Top with feta and serve.
