3-4 center cut beef marrow bones, about 3 inches long
6 Yukon Gold potatoes
1/2 cup melted butter
1/2 cup cream
parsley - fresh, chopped or dried
Salt and Pepper

Directions:
Directions:
Place the bones, cut side up, onto a baking sheet and cook the marrow until soft and slightly separating from the bone - about 15 minutes in a 350 degree oven.

Boil salted water for potatoes and cook them for 25 minutes until soft.

Remove marrow bones from oven. Drain potatoes and add melted butter and cream. Mash until smooth. Using a spoon, scoop out marrow with the juices and add to the mashed potatoes. Add parsley and season with salt and pepper.
