1 1/2 c. Half and Half
32 oz. (One loaf) Velveeta Cheese (Original Flavor)
8 oz. white American cheese slices, diced
8 oz. Cheddar cheese (I use graded in a package)
2 T. butter
1 large onion, finely chopped (1 cup)
1 clove garlic, finely chopped
1 Can Rio*Tel Diced Original Tomatoes & Green Chilies, 28 oz
1 can (4 oz) chopped jalapeño chilies, drained and Juice (Be careful depending on how hot you like it). I put a little in, stir and taste, a little more, stir and taste. Jalapeño juice will fool you so let it cook in a bit before you get over zealous with it.

Dash or two of chili powder this takes the bite out of it.

Put cheeses, half and half and Del Rio cheeses in a lined crock pot on high to melt start adding the juices of the jalapeño to taste…

I cut the jalapeño is very small pieces and add slowly (depending on how hot you like it). Please make sure you wash your hands after you cut up the jalapeño’s, and do not touch your eyes or other parts OUCH!

Meanwhile…. In 10-inch skillet, melt butter over medium-high heat. Cook onion and garlic in butter 3 minutes or until tender.

As soon as the cheese is melted turn it down to low or it will burn. You can also microwave first. I have done it both ways, and like the crock pot method better. If you microwave, keep the crock pot on low.

Add onion and garlic mixture to the melted cheese, and the dash of chili powder.

Cook to taste:

Let cook an hour or so till hot and melted. If you want it quick turn to high; make sure you watch it and stir a LOT, or it will burn if it’s on high.

Serve hot in the crock pot (on low) or fondue (on low). I put a ladle in the pot and let everyone serve themselves, with several variations of tortilla chips.

Variations
You can add ground turkey or chicken if you like it a little hardier. My family likes it with the cheesy .
