12-oz. package of Rice-A-Roni (Beef flavor) – reserve seasoning packet
1 ½ lb. lean ground beef
2 eggs
Seasoning packet from Rice-A-Roni mix
3 ½ c water

Directions:
Directions:
Combine Rice-A-Roni mix with ground beef and eggs. Shape into 1 ¼-inch meatballs. In a large skillet, brown meatballs (all the way around so they stay firm) in light cooking oil.

Drain meatballs and remove excess oil. Combine seasoning packet with the water. Pour over meatballs.

Cover and simmer for 30 minutes. Thicken gravy with a flour/water mixture. Add beef bouillon for additional taste.

Kathy says that her brother Larry loved these, as well as her son Jacob. She says the trick is to brown the meatballs all the way around so that they don’t fall apart.
