"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
2 lb lean ground beef (or ground turkey)
1 onion, chopped
1 c water
1 14.5 oz can diced tomatoes
2 8 oz cans tomato sauce
1 large clove garlic, minced

Salt to taste, if desired
½ tsp freshly ground pepper
1 c dried elbow macaroni

Directions:
Directions:
Saute the ground meat with the onion in a Dutch oven or large sauce pan. Add the minced garlic, tomatoes, tomato sauce, water, Italian seasoning, bay leaf, soy sauce and pepper. Cover and simmer for 20-25 minutes.

Add elbow macaroni, stir well, return the lid to the pot and simmer for about 20 more minutes. Turn off heat, remove bay leaf and adjust seasoning if desired.

I like to serve the Goulash in bowls with a dollop of sour cream on top and a dash or two of Tabasco.
