12 oz semisweet chocolate
5 Tbls brewed espresso or strong coffee
2 c sugar
1 c unsalted butter
6 lg eggs, separated
1 c flour

Directions:
Lightly butter a 9 inch springform pan and dust with flour (shake out any excess flour). In a double boiler, over hot (not simmering) water, melt together the chocolate and espresso, stirring constantly. Remove from heat and cool until tepid. In a large bowl cream sugar and butter together at medium-high speed until light and fluffy. Add the egg yolks, one at a time, beating well after each addition. Beat in flour.
In a large, grease-free bowl, beat egg whites on medium-high speed until they form stiff, shiny peaks. Fold in one quarter of eggs whites into chocolate mixture to lighten; fold in remaining egg whites. Fold in the butter/flour mixture.
Scape batter into prepared pan; bake 60 to 70 minutes, until top is crusty and cracked, and middle is slightly moist. Remove cake to a wire rack to cool completely; remove sides and move to serving plate. If desired, place doily on top and shake powdered sugar over to create design.

This is an old recipe I found soon after we were first married; I don't make it often, but it is amazing! Deep rich chocolate flavor and color-amazing with homemade vanilla ice cream.
