1 1/2 c dry navy beans
5 c water
1 carrot, finely chopped
1/4 c celery, finely chopped
1 medium onion, chopped
1 ham hock or 3/4 lb chopped ham
1/2 tsp salt
dash pepper

Directions:
Directions:
Soak beans for 12 hours, then drain. Put beans in Dutch oven and cover with water; simmer for 30 minutes. Place all ingredients in a slow cooker ; cover and cook on LOW for 10 to 12 hours. Remove ham hock if applicable; cut meat in small pieces. Can mash beans to make to thicken if desired.
