Fat from reserved turkey juice

Pour fat and meat juices from pan into bowl; let fat rise to top of juices (easy way-place in freezer to firm up fat). Skim off fat. For each cup of gravy, measure 1 Tbsp into pan. Measure 1 Tbsp flour for each cup of gravy; blend into fat in pan. Cook until bubbly, stirring constantly; brown slightly. You will need 1 cup of liquid for each cup of gravy. Use the reserved meat juices and turkey broth. Add liquid to flour/fat mixture. Cook, stirring constantly, until thickened. Add giblets, simmer 5 mins. Taste-season if needed with salt and pepper.
