6 c shredded cheese, cheddar or Jack
2 Tbsp butter or margarine
1/3 c green onions, chopped
1 jar (4.5oz) sliced mushrooms, drained
8 oz cooked ham, diced
8 eggs
1/2 c flour
1 3/4 c milk
parsley to taste

Spray 9 x 13 inch baking dish with non-stick cooking spray. Sprinkle half of the cheese evenly into baking dish. Melt butter in medium skillet over medium heat. Add onions and mushrooms; cook until tender. Arrange over cheese in baking dish and add diced ham. Top with remaining cheese. In lg bowl, beat eggs, then add flour, milk and parsley; blend well. Pour over mixture in baking dish, cover and refrigerate overnight (at least 8 hours). Preheat oven to 350 degrees and bake uncovered for 55-60 min or until mixture is set and top is lightly browned. Let stand 10 min; cut into squares.

This is a part of our traditional Christmas morning breakfast; it can be made the day before and popped into the over to bake while opening the Christmas gifts. Warm and savory, it pairs so well with sweet rolls and juice.
