1 Cup Water (room temperature)
1/4 Cup Cool water
1 Cup Sugar, white granulated
1 Tbsp Butter
1/3 Cup Corn Starch
1/4 tsp salt
3 Lemons, zest before juicing
4 eggs, separated, save the whites for the merengue


1 cooked pie crust

Directions:

preheat oven to 350º

To Make Lemon Filling:

Boil 1 Cup Water and Sugar for 1 minute.

Mix together corn starch and salt.
Stir 1/4 Cup cool water in the corn starch mixture until smooth and thick.
Then add to hot mixture.
Keep cooking and stir constantly.

Beat egg yolks well, temper eggs with hot mixture and slowly add together.

Add Butter.

Place mixture back on stove, bring to slow boil and cook 2 minutes. Stir in Juice and zest of 3 lemons. Stirring constantly.

Pour thickened mixture into cooked pie shell.

Make Merengue and spoon onto filled pie shell.
Cook for 8-10 min, until tips of merengue start to brown.
