1/4 cup rolled oats
1/2 cup unsweetened vanilla almond milk
1 tbsp. chia seeds
1/2 tbsp. cacao nibs
1/2 tbsp. peanut butter (or any other kind of nut butter)
1/4 cup blueberries (or other seasonal fruit - I use pomegranate arils in the winter)
2 tsp honey
optional: 1 scoop protein powder (I use plant-based protein powder)

Topping: 1 tbsp granola

STEP 1: Mix all ingredients together in a container. Cover and let it sit in the refrigerator overnight.

STEP 2: Top with 1 tbsp. granola and enjoy!
