Chocolate Pie w/ Meringue Recipe

Ingredients: 3 1/3 Cup Whole Milk
2 Cup Sugar 4 Tbsp Corn Starch 3 Tbsp Flour 1/2 Tsp Salt
4 Eggs, separate the yolks and whites, discard 1 yolk-- so that you have 3 egg yolks and 4 egg whites in separate small bowls. (the egg whites will be used for the merengue)
3 blocks of semi-sweet chocolate, (shave or cut up into small bits)
1/2 stick butter, (cut up into small pieces)
1 Tbsp Vanilla

Directions:preheat oven 350º
Place milk in heavy saucepan and bring to a slight boil. Stirring constantly.
Add Corn Starch, Flour, and Salt to Sugar. Slowly add into hot milk mixture, stirring constantly.
Beat egg yolks and slowly temper with the hot mixture. Place back onto stove and keep cooking. Stirring constantly.
Add Chocolate and keep stirring.
Add Butter and keep stirring.
Add Vanilla and keep stirring.
Continue cooking and stirring until small bubbles form. Then cook another 1-2 minutes.
Take off the heat, Beat with wire whisk for 2 minutes.
Pour into cooked pie crust.
Make meringue, spoon over pie, and bake for 6 to 8 minutes until meringue starts to brown.
Cool for 30 minutes and can be refrigerated.
