1 tbsp. gelatine
2 tbsp. cold water
3 tbsp. butter
3 tbsp. pastry flour
1/2 tsp salt
dash of mace, pepper and paprika
2 c hot milk
2 c cooked or canned salmon flaked
1 tbsp. lemon juice
4 hard cooked eggs

Soak the gelatin in cold water for 5 min. Melt butter in saucepan, mix in flour and seasonings. Stir gently over low heat 3 min. Add hot milk, stir and cook till smooth and thick. Add soaked gelatin, stir until dissolved and add the salmon and lemon juice. Shell the eggs, remove whites from yolks. Save yolks for sieving. Add the finely chopped whites into salmon mixture. Pour into oiled loaf pan 9X5X3". Chill until firm. Unmould on a bed of lettuce and frost with mayonnaise. Press the yolks through a sieve over the dressing. Decorate with long narrow leaves but from green pepper or sweet pickle. Serve with whole wheat bread and a salad bowl.
