1 tsp butter
1 tsp olive oil
2 small onions, chopped (1 1/2 c)
6 med carrots (3-4 c)
3 celery ribs (1 c)
3-4 lbs bone-in chicken breast/thighs
1/2 tsp salt
parsley
thyme to taste
5 1/2 c chicken broth
2 c med egg noodles
1 c frozen peas (opt)

Directions:
Directions:
Place butter and oil on saute; when sizzling add onion. Saute approx. 1 min. Stir in carrots and celery; saute approx. 5 min, stirring occasionally. Toss chicken with salt; add chicken, parsley, thyme and broth to pot. Set High Pressure to 8 min. When beeps, wait 5 min to slow release pressure, then use Quick Pressure release. Remove chicken and shred chicken (discard bones). Return to pot, select Browning and bring to a boil. Add noodles, select Simmer and cook noodles according to package directions. Stir in peas if desired when noodles are done.
