2 1/2 T Butter divided
1 lg onion chopped
1 clove garlic finely chopped
1 lg carrot grated
1 T parsley chopped
2 stalks celery chopped
2 1/2 c chicken broth divided
1 lb kohlrabi with leaves (2-3 bulbs) sliced thin
1 T flour
1 1/2 tsp lemon
salt and pepper

In a large pot saute 1 T butter and onion for 1 min. Add garlic, carrot, parsley, and celery. Saute 5 mins. Add 1 c chicken broth and simmer 10 mins. Add kohlrabi and remaining chicken broth. Cook until kohlrabi is tender about 15 mins. In a small sauce pan melt remaining butter until almost burned. Whisk in 1 T flour to make a paste. Add 1 c of hot broth from the soup and stir everything back into the soup pot. Cook until thickened about 10 mins. Add lemon juice and season to taste with salt and pepper.

My Grammy used to make Kohlrabi Soup but wouldn't share it with anyone. My mom found this recipe and even Grammy said it was pretty close. Kohlrabi is a root vegetable found in the spring or fall.
