Olene's Cheesy Rice Recipe

1 C. long grain rice
¾ lb. grated cheddar cheese
1 pt. sour cream
1 can diced green chilies (Olene used to use ground jalapeno peppers picked and pickled from her garden)
Salt/pepper to taste

Directions:
Directions:
Cook rice as directed. Mix all the other ingredients together. Cook at 350º for 15 minutes in a covered baking dish. Top with cheese and place back in oven about 5 min to melt cheese.

Mike's note: My mother in law, Olene Holley, used to make this and it was always a hit. She used chopped peppers out of her garden and was on the spicy side. I like it with the chilis, not quite so warm, works great either way. This is still a staple at Holley Thanksgiving! Just a note; when mixing this it is very thick and gooey, that is ok, don't worry. This is very easy to make and wonderful. If you need an entrée; top with Carne Quesada and you're done!
